Hakkasan, the world-class Cantonese restaurant, will mark Chinese New Year celebrations with a festive menu featuring dishes that are made using ingredients traditionally thought to usher in good fortune. The limited-edition à la carte menu will be available until Sunday, 28th February 2021. Centred around the principle of “Peace, Love and Sharing”, this Chinese New Year, the year of the Ox will see Hakkasan’s wishing tree tradition go virtual and be transformed into a digital showcase at the restaurant.
It has long been a tradition to construct a Wishing Tree within Hakkasan restaurants worldwide on Chinese New Year, with guests invited to write their wishes on a red ribbon before tying it to the tree. This year, in light of the pandemic, Hakkasan’s Wishing Tree tradition will go virtual for the first time ever with guests encouraged to share their wishes digitally, through their social media handles, which will be cinematically projected at Hakkasan’s Ling Ling Lounge.
The Celebratory Menu
The limited edition menu includes vegetarian small eats like Radish puff flavoured with red lotus flower and sesame and Mushroom bun with shimeji, king and button mushroom, this bun has an earthy flavour enhanced with chilli and oyster sauce. Meat and seafood lovers can choose from the crunchy Chicken wakame puff with edible seaweed; Chicken and prawn shui mai with gold leaf, an open faced dim sum wrapped in wanton sheet, made using activated charcoal and the Crab dumpling made using prawn (a symbol of liveliness and prosperity) and crab meat, this dumpling is laid on a bed of spicy Singaporean sauce.
Festive mains include Hakkasan’s signature wok dishes like Stir-fry broccolini with mushroom and water chestnut made in oyster mushroom sauce, with porcini paste, flavoured with truffle oil; Stir-fry chicken in lang chin sauce tossed with crunchy snow peas, leeks, earthy shimeji mushrooms and flavoured with black bean and hoisin sauce and the Steamed Chilean seabass in black bean sauce, set atop a bed of crunchy asparagus, topped with umami flavoured black bean and toban chilli sauce. Fish is said to bring prosperity and abundance in Chinese culture and is an indispensable part of a Chinese New Year celebratory meal. The mains can be paired along with Truffle rice with bird eye chilli tossed with asparagus, enoki mushroom, truffle oil and porcini paste, topped with crispy fried shimeji mushroom.
The feast will finish with the ornate The Mandarin, a white chocolate mousse and cacao butter dessert, topped with gold leaf and mandarin gel. This is a reimagining of the auspicious Mandarin fruit which is traditionally given to loved ones at New Year.
The bar team at Hakkasan has brought together a robust cocktail menu to emanate the Ox, being strong and fiery, with concoctions include - Sesame old fashioned with sesame fat-washed Templeton 4 Y.O., champagne syrup and chocolate bitters; Sichuan Sour made with fat-washed Ballantine’s finest whisky and Sichuan syrup; Fire and Grace a blend of tequila, fire and grace syrup, Cointreau, fresh grapefruit juice and maraschino liqueur and more. The beverage list will also feature the non-alcoholic Golden Ox fruit blend with Seedlip Spice 94, cold brew tian Hong, strawberry syrup, raspberry puree and sprite.
