Love Bugs

Vermicelli crusted Yoghurt patties with strawberry coulis

Ingredients:-

· Hung curd 150 gm

· Cumin powder 20 gm

· Fresh green chilli 5 gm

· Icing sugar 10 gm

· Fresh coriander 50 gm

· Mint Leaves 2 gm

· Vermicelli 60 gm

· Strawberry 80 gm

· Oil 150 ml

· Salt to taste

Procedure:-

· Take hung curd and add Indian spices to it. Knead it well.

· Now make flat patties of it. Crumb it with vermicelli and deep fry till gets golden brown colour.

· Serve hot with mint and strawberry coulis.

Fiery Love

Chargrilled Barbeque Paneer

Ingredients:-

· Paneer 150 gm

· Hung Curd 120 gm

· Chaat Masala 2 gm

· Fresh coriander 50 gm

· Garam Masala powder 2 gm

· Green chilli chopped 2 gm

· Amul cheese 80 gm

· Degghi Mirch Powder 3 gm

· Mustard Oil 15 ml

· Fresh Mint 80 gm

· Salt to taste

Procedure:-

· Make red tandoori marination by mixing hung curd with the above Indian spices, amul cheese and mustard oil.

· Cut paneer into cubes and marinate them and keep a side for around 3- 4 Hours.

· Cook the marinated paneer in the tandoor for 10- 12 minutes.

· Assemble the paneer as shown in picture.

· Serve hot with the mint chutney.

Mix N Match

Pine nut and wild mushroom stuffed chicken roulade with Exotic Vegetables

Ingredients

· Chicken breast 150 gm.

· Pine nuts 20 gm.

· Black fungus 10 gm.

· White fungus 10 gm.

· Shitake 10 gm.

· Garlic 20 gm.

· Salt to taste

· Black pepper 2 gm.

· Thyme 3 gm.

· Butter 20 gm.

· Fresh cream 30 gm.

· Olive oil 40 ml.

· Truffle oil 5 ml.

· Cherry tomato 2 no.

· Baby carrot 1 no.

· Asparagus 2 no.

· Cherry tomato 2 no.

· Green Zucchini 2 gm.

· Yellow squash 2 gm.

Procedure:-

· Take chicken breast and marinate it with thyme, salt and pepper. Make the mixture for stuffing of mushroom and Pinenuts.

· Make chicken roulade and Panseared it, now take out ribbons of zucchini, blanched them and roll it over roulade.

· Saute asparagus and baby carrot and cherry tomato.

· Assemble as shown in picture and garnish it with micro greens.

Cupids Desire

Vanilla beans Panacotta

Ingredients

· Fresh cream 100 ml.

· Castor sugar 15 gm.

· White chocolate 100 gm.

· Water 15 ml.

· Gelatine 5 gm.

· Raspberry 5 gm.

· Blue berries 5 gm.

Procedure:-

· Soak the gelatine in water; keep a side for 5-10 minutes.

· Heat the fresh cream with castor sugar, now add the soaked gelatin. Keep a side for 10 minutes.

· Melt the white chocolate and make cylindrical pipe. And keep a side.

· Pipe the mixture in the white chocolate roller, and keep in Chiller for 30- 35 Minutes.

· Garnish it with chocolate curls, raspberry and blue berry as shown in picture.
