3 Recipes to Pamper the Women in Your Life

  1. Creamy Spinach and Mushroom Risotto, a luscious combination of Arborio rice, sautéed mushrooms, wilted spinach, and a velvety cream sauce.

Ingredients:

  • 1 cup rice
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach leaves
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  • In a microwave-safe bowl, heat the vegetable broth until hot.
  • In a separate microwave-safe dish, combine the olive oil, onion, and garlic.

  • Fold in the spinach leaves, Parmesan cheese, salt, and pepper. Microwave for 2 minutes or until the spinach wilts and the cheese melts.

  1. Thai Peanut Butter Noodles, a quick and easy dish is perfect for a satisfying meal that is bursting with flavour.

Ingredients:

  • 4 cups spaghetti or linguini pasta
  • 1/3 cup natural peanut butter 
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • Crushed peanuts for garnish (optional)

Instructions:

  • Cook the pasta according to the directions on the package. Drain and set aside.
  • In a microwave-safe bowl, combine the peanut butter, olive oil, soy sauce, rice vinegar, and brown sugar.
  • Microwave the peanut sauce on medium power for 30 seconds to soften the peanut butter. Whisk the ingredients together until smooth and well combined.
  • Add the cooked pasta to the bowl with the peanut sauce. Toss the pasta until it is evenly coated with the sauce.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • Red food coloring (optional)

Cream Cheese Frosting:

  • 4 cups cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.

If desired, add a few drops of red food coloring to achieve the vibrant red color.
