Hospitality Lexis had a conversation with  F&B Manager Sanket Thakur of The Mumbai Resort to know about the latest trends in Wedding Cakes.

Hospitality Lexis/ Print edition December 2019

Nowadays, every guest wants and demands fondant cakes. A gorgeous, towering layer cake means one thing: This is special. Here, you’ll find our best multi-layered cakes from classics like vanilla, carrot, coconut, and red velvet to modern cakes inspired by Irish coffee and rich hot chocolate.

Plus, a handy tip for making your cake stand up straight, even if you cut the layers a little crooked.

The cake making process and timeline has changed totally nowadays. We schedule everything involved in making a cake. For us, the preparation begins in a couple of months or a week before the event depending on our workload and the complexity of the cake. When scheduling, you need to consider the design and size of the cake, which will affect baking time, delivery, etc. and not to forget about practising techniques, juggling other orders, and taking some time off.
