Drawing inspiration from the mountains of Uttarakhand, where spring transforms the landscape with vibrant hues of green, the festive menu curated by Culinary Chronicler Rushina Munshaw Ghildiyal, will offer dishes that mirror the colours of spring greens, blossoming flowers, and the ripening fruits.
The menu revives traditional recipes with contemporary twist including turmeric-infused yellow pulao, adorned with saffron-infused Meethe Chawal, redolent of homemade ghee and saffron. Classic Pahadi dishes take centre stage, featuring Remuadi (Veg), a crunchy salad of radish, spring greens, and Pomelo, seasoned with hand-pounded salt. Non-vegetarian delights include Kachmauli, a salad of slow-smoked medium rare leg of lamb, and Bhaangwala Chicken, succulent chicken slow-cooked with spring herbs and Himalayan hemp & perilla seeds.
Vegetarian options include Naal Badi ka Saag, Ghee wale Basmati & Til Mooli Relish, Naal Badi, Signature Colocasia Badis, Chainsoo, Jakhiya Aloo, and more. Each dish is a celebration of the freshness and diversity of springtime ingredients.
