Chef Dibyendu Roy and Chef Somnath Rakesh meticulously prepare each dish, ensuring that the flavours and textures are true to tradition - served in a traditional setting, complete with banana leaves and copper vessels, creating a truly immersive experience. The service staff attired in traditional garments brings about a festive feel. Saadya with its rich diversity and balance has on offer rice which is the centrepice of the meal typically served as either plain rice or Matta rice (a brown rice variety) along with accompaniments like sambar, rasam and puliyodara. Vegetables typically would be thoran, pachadi, avial and olan.

Beyond the culinary delights, the Onam celebrations at these resorts also feature karnatic music playing in the background. These performances offer guests a glimpse into the rich cultural heritage of Kerala and add to the festive atmosphere.

The culinary journey begins with Sambaram, a refreshing spiced buttermilk, followed by Pyaru Thovaran, where runner beans are tossed with a coarse paste of coconut and chilli, offering a delightful crunch. The rich and hearty Kootu Curry features a vegetable medley cooked in brown coconut gravy, while Avial delights with its creamy and spicy combination of vegetables simmered in coconut, yoghurt, and chilli paste. Olan, a subtle dish of white pumpkin and black-eyed beans simmered in coconut milk and chilli, contrasts beautifully with the tangy and creamy Kalan, made from yam and raw banana cooked in coconut and yoghurt. Erissery, a comforting dish of red pumpkin and green gram dal in coconut curry, and Parupu Thalichathu, a simple yet flavorful lentil curry, continue the journey through Kerala’s culinary heritage. The sweet and tangy Kaitachakka Pachadi, featuring pineapple cooked with coconut and spices, and the tangy Thakkali Rasam, a tempered lentil, tomato, and tamarind extract, add layers of flavour to the feast.

The meal is further enriched with Murungakai Sambar, a traditional drumstick and lentil curry, paired with Kuthari Choru, perfectly cooked Kerala red rice. No Onam Sadhya is complete without desserts, and Parippu Pradhaman, lentils cooked in jaggery and sweetened coconut milk, and Pal Adai, steamed rice flakes cooked in milk with cardamom, offer a sweet and satisfying conclusion to the meal.
