There’s something about the Indian monsoon and street food. And chai, of course. Rains lashing down call for sumptuous, spicy fare served up with a generous dose of chutney. And, a persistent afternoon drizzle reminds one of colourful umbrellas jostling for space at the corner vendor’s, with tasty plates of chaat and pakoras doing the rounds.
Inspired by this emotion, chefs at Four Seasons Hotel Bengaluru have curated a Chaat Festival menu that features some of the adored snacks from north India, in particular around Delhi and thereabouts. Anyone who has been to Delhi knows about the capital’s love affair with chaats and other street food, bursting with flavour. The city’s diaspora spans the length and breadth of the country, and everyone would stop by for a quick refuel at the chaat counters, which see steady streams of fans waiting to get their dose of this unique snack.
Delhi 6 Aloo Tikki, or potato galettes stuffed with lentil mix, pan fried, topped with yoghurt, tamarind and mint chutney; Pyaaz Aur Dal Ki Kachori or onion stuffed fries topped with a sweet yoghurt, tamarind and mint chutney; Bharwan Mirchi Pakora, or batter fried chilies filled with a tangy potato mash; Chandni Chowk Chhole Samosa Chaat, or fried pastry stuffed with cumin scented potato mash; Dahi Gujiya, or split chickpea dumplings topped with grated raddish, yoghurt; Dehlvi Golgappa, or wafer thin encasings filled with potato and chickpea mash; and Dariba Kalan Dahi Papdi Chaat, or crisps with vermicelli, yoghurt, tamarind and mint chutney are some of the specials features of the menu.
“Chaats in the rainy months are definitely an emotion and a shared experience best enjoyed with friends and family. Nothing can keep the crowds away from the neighbourhood chaat seller, not even a heavy downpour. Such is the draw of this amazing Indian street food. We have tried to recreate some of that magic here in the Hotel,” remarks Executive Chef Dirham Haque.
