Ekaa’s unveils Tasting 4.0 – IMPRINT: Make a mark that can’t be erased

EKAA, the award-winning and critically acclaimed trailblazer known for pushing the boundaries of gastronomy, has unveiled its Tasting 4.0 menu, titled “IMPRINT”. Curated and conceptualised by Chef Niyati Rao, this menu invites guests to embark on a culinary journey inspired by the enduring imprints that simple things in life leave upon us – from cherished memories to the wonders of nature.

At EKAA, the culinary philosophy has always revolved around the magic of ingredients and the art of innovation. Tasting 4.0 is a reflection of the commitment to this ethos. It’s a celebration of the ever-changing seasons and the remarkable produce they bring, all while staying true to its roots. The inspiration for Tasting 4.0 draws from a diverse tapestry of experiences woven into each dish, from personal experiences to travels, and flavours, every element has left its own indelible mark. Also, the produce that monsoon provides, leaves a significant influence on the menu; as does the team’s transformative journey to Nagaland, which played a pivotal role in refining the cooking techniques and introducing unique ingredients. 

The menu features dishes that are both personal to the Chefs at Ekaa and to the people and the nature surrounding them. Among the many that promise to etch themselves into your memory is a course called – Fresh Fruit, which deceptively sounds like a simple dish, but through this, Ekaa aims to pay a profound tribute to the magic that nature works on the produce. The fruit here keeps changing, it features the freshest and the best fruit of the season, locally sourced. This is the first course and builds the base of the core idea, that is – nature and its magic! Hearth, is another masterpiece, a bread dish that pays homage to three cherished cultures, each contributing to the tapestry of flavours that we hold dear, the first being the starter culture that is used to make the bread, the second is the culture in milk to make the butter and cheese, and the third being the people who make this course, coming together to make this dish. It embodies the spirit of collaboration, reflecting the diverse group of individuals who came together to craft this unique course. 

A star of Tasting 4.0 is a dish named Durian, a testament to Ekaa’s commitment to exploration, being the first Indian restaurant to introduce Indian Durian to the subcontinent’s dining experience. Sourced from the lush lands of Kerala, it took a considerable effort to bring this gem to your table. Paired with buffalo cream cheese, specially handcrafted for Ekaa by a fromagerie (Spotted Cow), the result of extensive research and development, this dish is nothing short of extraordinary. Another dish is Ghar,  inspired by one of the Ekaa chef’s Sunday meals at home, which left an imprint on him. It’s more than just a meal; it’s a cherished memory reimagined on your plate, each bite, transporting you to the cosy embrace of a Sunday meal at home.
