JW Marriott Kolkata is delighted to announce the Epar Opar Food Festival, a celebration of the rich and diverse culinary traditions of "Opar Bangla" (Bangladesh) and "Epar Bangla" (West Bengal, India), from 19th to 28th July. This gastronomic event is set to offer an unforgettable experience, showcasing the shared heritage and distinct flavours of these regions.

The culinary traditions of Opar Bangla have been shaped by its geography, climate, and historical influences. The fertile land and abundant waterways of Bangladesh have contributed to a diet rich in rice and fish, with the famous Hilsa fish (Ilish) being particularly cherished. Key aspects of Bangladeshi cuisine include the use of mustard oil, panch phoron (a five-spice blend), and diverse cooking techniques like steaming and braising. The Mughal era introduced rich, aromatic dishes like biryani, kebabs, and korma, while street food staples such as fuchka (pani puri), chotpoti, and jhalmuri are immensely popular.

West Bengali cuisine, while similar in many respects to Bangladeshi cuisine, has its own unique characteristics. Rice and fish form the core of the diet, with varieties like Rohu and Katla being commonly used. West Bengal is renowned for its sweets, particularly rasgulla, sandesh, and mishti doi. The colonial history of the region has left its mark with dishes like chicken cutlet, fish fry, and the use of bread and baking. There is also a rich tradition of vegetarian cooking, influenced by religious practices and the availability of diverse vegetables.

Guests at the Epar Opar Food Festival can indulge in a variety of dishes from both regions. The live Bangla bhorta counter will feature roasted dry red chili, mustard oil, and coriander, with options like aloo, dal, bangan, pumpkin, dherosh (okra), tomato, onion, ucche, chicken, and mawa ghat special hilsa bhorta. The mach bhaja counter will offer puti mach and kachki maach.

The main course will include an array of vegetarian dishes such as kochu bata, kochur sag, aloo jhinge posto, alu \ fulkopi rezala, phulkopi bhapa, potoler dolma, and aamer tok dal. Non-vegetarian options will feature delicacies like shorshe ilish, chingri malai curry, kochupata bhapa maach, kachalonka murgi, Goalondo steamer chicken, murgi roast, khashi kalabhuna, railway mutton curry, Dak Banglow chicken curry, and country captain chicken curry.

Staples will include panta bhat, morog polao, khud er bhat, sada polao, and muri ghonto. For dessert, guests can enjoy misti doi, channar jalebi, rosogolla, and dannadar.
