Sattu Paratha with Thecha (Green Chutney)

Ingredients:

For Sattu paratha

1. 2 cups sattu (roasted gram flour)

2. 1 cup finely chopped onions

3. 1/2 cup chopped coriander leaves

4. Salt to taste

5. Water

6. Wheat flour dough (for paratha)

7. Ghee for cooking

For Thecha

1. 10-12 green chillies (adjust according to spice preference)

2. 1 cup fresh coriander leaves, chopped

3. 1/2 cup fresh mint leaves

4. 4 cloves of garlic

5. Salt to taste

6. 1 tablespoon roasted peanuts

7. 1 tablespoon oil

Instructions:

Sattu paratha

1. In a bowl, mix sattu, onions, coriander leaves, and salt.

2. Gradually add water and knead into a dough-like consistency.

3. Divide wheat flour dough into small balls and stuff them with the sattu mixture.

4. Roll out the parathas and cook with ghee on a microwave-safe plate for 2-3 minutes. The large turntable in Voltas Beko will ensure you can easily cook more for your extended family!

5. Serve hot with a side of tangy tomato chutney or Thecha.

Thecha

1. Add green chillies, garlic, coriander leaves, mint leaves, and roasted peanuts to a blender.

2. Blend the ingredients until you get a coarse paste.

3. Add salt and mix well.

4. In a microwave-safe bowl, heat oil for 30 seconds.

5. Microwave the mixture for 1-2 minutes to enhance flavours.

6. Let it cool and refrigerate. Serve as a spicy and flavourful accompaniment to your Chhath Puja platter.

Kheer with a Nutty Twist

Ingredients:

1. 1 cup rice

2. 4 cups milk

3. 1 cup sugar

4. A handful of chopped nuts (cashews, almonds, pistachios)

5. Saffron strands (optional)

6. Cardamom powder

Instructions:

Bihari Litti-Chokha

Ingredients:

1. 2 cups whole wheat flour

2. Water for kneading

3. 1 cup roasted gram flour (sattu)

4. 1 onion, finely chopped

5. 2 tomatoes, chopped

6. 1 brinjal (eggplant), roasted and mashed

7. 2 potatoes, boiled and mashed

8. 4-5 cloves of garlic, minced

9. 1 green chilli, finely chopped

10. Salt to taste

11. Mustard oil

Instructions

For Litti

1. Knead the whole wheat flour with water to form a stiff dough. Let it rest for 30 minutes.

2. Divide the dough into small balls.

3. Stuff each ball with sattu and roll it into a round shape.

4. Slightly press the balls to give the litti a proper shape and keep all the litties on a microwave rack. Turn the litties in between so that it will cook from both sides Cook till it will turn slightly brown.

For Chokha

1. Roast the brinjal and tomatoes and peel it. Mix together the roasted and mashed brinjal, boiled and mashed potatoes, chopped tomatoes, minced garlic, chopped green chilli, and salt.

2. Take a microwave-safe bowl and add mustard oil and heat it till the smell goes away. Add chopped onions and microwave for 2 minutes. (Onion should not be fully cooked). Now add whole mixture to it and microwave for 3-4 minutes, stirring occasionally.

3. Garnish it with coriander leaves.

4. Serve the litti with chokha for a hearty and authentic Bihari touch to your Chhath Puja platter.
