“Khasi cuisine focuses on bringing out the truest flavour of every ingredient in a dish. It is simple, uncomplicated, and without the use of any flavour-influencing spices. It is wholesome and balanced”,

Daphimanroi and Dakiwanri.

Meghalayan cuisine is an amalgam of three tribal cuisines of the region- Garo, Khasi, and Jaintia. While the ingredients remain almost the same, the methods of preparation differ with the tribes, and the duo chefs are experts in Khasi cuisine which is often devoid of a lot of spices and oil. Khasi cuisine is rich, diverse, and deeply rooted in culture. It is primarily based on the local produce of the region and meat and is mostly cooked using seasonal and sometimes wild ingredients.

Baseer Ahmed, Executive Sous Chef at THE Park Bangalore, stated, "Culinary Curations by THE Park is an initiative that focuses on the indigenous micro cuisines. These cuisines are known for their authentic taste and use of locally sourced produce to maintain their traditional food heritage. Through a partnership with Chef Daki and Daphi, we aim to bring more attention to this special Khasi cuisine and offer a unique culinary experience to the people of Bangalore.”
