From Hawaii to Belgium, global food on IT City's plate

Bengaluru is going global, in the kitchen. Imagine digging into traditional Portuguese custard tarts or a Hawaiian coconut chicken soup and pineapple jelly. This and much more is on the IT City's plate with world cuisine festivals going beyond the tried and tested route. While Awadh, Coastal and run-of-the-mill international food festivals have been done to death, hotels in the city are now spreading their wings to bring relatively unexplored cuisines from around the world.

ITC Windsor, for example, has been experimenting with food from far off lands like Belgium, Portugal, Australia and Spain. For their recent Belgian food festival, the chef curated decadent Belgian chocolate desserts and other relatively unknown dishes like Tomate aux crevettes (a fresh shrimp and tomato dish) and Lamb Carbonade Flamande (a rich beer-infused lamb stew). The hotel will be hosting a Jamaican food festival next month.

From Hawaii to Belgium, global food on IT City's plateCocktail bar Three Dots and a Dash is rolling out a Hawaiian punch with traditional food from the gorgeous islands, not to mention tropical cocktails with a Hawaiian Food Festival this week. Think Manapua Buns shoyu (steamed buns with meat filling), Sweet-Sour Chilly Fish with Sesame Pineapple and banana and coconut-based desserts.

"There is a lot of interest among people about world cuisine and Hawaiian food is not generally found in mainstream restaurants. As a Tiki bar, we want to transport our guests to Hawaii with not just the food and drink but also decor," general manager Viktor Salter said.

Mikusu at Conrad Bengaluru recently hosted a Singapore Food Festival with authentic dishes like Peony Crab Dumpling, Marinated Baby Octopus and Har Cheong Chicken Wings on offer.

“These food festivals are a platform for cultural exchange through cuisine. With a large expat group residing and working in Bengaluru, we also hope to create more inclusive menu for them and of course aiming to curate and create an appetite for lesser known dining affairs,” Manas Krishnamoorthy, General Manager at ITC Windsor said.
