Bengaluru, 10th July 2025: JW Marriott Hotel Bengaluru is delighted to announce a two-night exclusive pop-up in collaboration with Fireback by EHV, introducing the nuanced and soulful flavours of Thailand to the city. On 12th and 13th July 2025, guests will be invited to experience a rare dinner-only engagement, curated under the guidance of Michelin-starred Chef David Thompson, the creative force behind Fireback, Goa.

Internationally acclaimed for his scholarly approach and deep-rooted understanding of Thai cuisine, Chef David Thompson has been at the forefront of Southeast Asian gastronomy for decades. At Fireback, his most recent endeavour under the EHV banner, Thompson reinvents traditional Thai dishes with an uncompromising commitment to authenticity, layered precision, and culinary heritage. Each creation pays homage to the country’s vibrant food traditions, while embracing a refined modern sensibility.

Having made waves in Goa with its fire-grilled plates, robust curries, and punchy stir-fries, Fireback now brings its culinary philosophy to Bengaluru in a special format. The tasting menu showcases the restaurant’s signature approach: a harmony of spice, acidity, texture, and umami, woven into a progressive, narrative-led dining experience.

Guests can choose between two curated set menus, vegetarian and non-vegetarian, featuring dishes such as Miang Kham with pomelo and toasted coconut, Tom Kha soup with galangal and coconut, Pineapple Som Tam, Corn Fritters with Ajad, and Chicken Gorlae with crispy shallots. Mains include the Khmoy Green Curry with jasmine rice, available with vegetables or chicken. Dessert is a signature Cashewnut Pudding with caramelised taro and sapodilla.
