Begin with Mai Borok, Tripura’s bamboo shoot curry, brimming with earthy undertones that speak of forest kitchens and freshly gathered produce. The Tangkul Chilli Pork from Manipur follows tender meat, charred to perfection and layered with a deep, lingering spice. Assam’s Masor Tenga lends a lighter note, its tang recalling riverside meals and homegrown citrus.
The Thukpa from Arunachal unfolds gently with each spoonful, while Sikkim’s Momos bring a familiar grace to the table, humble, delicate, and steeped in tradition.
