Rajasthani cuisine, celebrated for its bold flavours and royal heritage, takes centre stage at La Utsav, the signature restaurant at Grand Mercure Bengaluru at Gopalan Mall. The 10-day culinary showcase is inspired by the vibrant kitchens of Rajasthan.
Curated by Chef Chetan Singh from Novotel Jaipur, whose culinary roots lie deep in Rajasthan’s regal traditions, the menu draws on time-honoured techniques and authentic ingredients to present a refined array of dishes that capture the rustic charm and layered flavours of the region.
Highlights include the fiery Laal Maas made with Mathania chillies, the quintessential Dal Baati Churma, and Ker Sangri, a rare delicacy of wild berries and beans from the desert. Other traditional favourites like Gatte ki Sabzi, Safed Maas, and festive desserts such as Ghevar round out the experience.
Set within the warm, inviting ambiance of La Utsav, this dining journey is a tribute to Rajasthan’s royal culinary legacy brought to life by a chef who embodies its spirit.
