Cooking is becoming more deliberate, shaped by memory, emotion, and the desire to create something that extends beyond the plate. 

We present to you a list of exciting food experiences taking shape across the country. Hope you like them and champion these stories. 

Laapi-Chokha and Flavours of North India at The Westin Resort & Spa, Himalayas

A kitchen fire, a sal leaf, and a ladle of ghee. That’s where it all begins.

On August 15 and 16Akasa, the all-day dining restaurant at The Westin Resort & Spa, Himalayas, hosts Laapi Chokha, a two-day celebration of Rajasthan’s culinary soul. Curated by Dr. Chef Sangeeta Dhar and Chef Vimal Dhar, the experience draws on ancestral recipes from Mewar and Marwar, shaped by rural rhythms and ritual cooking.

Dr. Dhar, recipient of the Lady Chef of the Year and the National Builder Award, has spent over 15 years reviving forgotten Rajasthani recipes through academic research and curated showcases. Chef Vimal Dhar, Founder President of the Royal Rajasthan Chefs Society, brings decades of experience from the kitchens of Taj and Devigarh, with a focus on indigenous ingredients and traditional techniques.

Meals are prepared using time-honoured methods, gently simmered, smoke-infused, and served on sal leaves. Ingredients like ker, sangri, kumatiya, phogle, mahua flowers and desert mint take centre stage. Expect Panchkoota, Mahua Chicken, Palak Bhujia and Dudhiya Makai ka Jhajhariya, each introduced with context and care.

The journey begins with Shree Ganesha Prasad, a ritual amuse-bouche of laapsi, moong and ghee rice. Day Two shifts to the Flavours of North India, offering a broader regional tapestry. Dishes like Sangri Lilwe ki Shami, Lemongrass Masoor Shorba, Chicken Bootha and Dhungaar Kaachar Bater draw from the kitchens of Punjab, Awadh and the Himalayan foothills, where lentil broths, layered gravies and charcoal smoking define flavour. The experience is priced at INR 2500 plus taxes per head, per dinner.

Across both days, the focus stays simple. Food that honours time, ingredients that speak for themselves, and a setting where memory is plated with quiet confidence.

This World Indigenous Day on 10th August, The Westin Goa invites you to rediscover these long-lost stories through “Forgotten Flavors”, an immersive Sunday Brunch experience that brings to life the ancient recipes, secret spice blends, and soulful traditions of Goa’s earliest communities.

At the center of this celebration is the Kunbi community, whose age-old culinary practices and handcrafted spice blends have long defined the unspoken language of Goan home cooking. From Kundal, a unique dish made with roasted rice and coconut, to Xit Kodi, the iconic fish curry prepared with freshly ground masalas, the brunch promises a rare taste of culinary history, brought back to life with care and reverence.

This unforgettable experience is crafted in collaboration with the Women of Fatorda, a collective of home cooks and spice makers who have mastered the art of traditional roasting, grinding, and storytelling. Their spice mixes—aromatic, layered, and deeply rooted in heritage—serve as the soul of the brunch, capturing centuries of wisdom in every bite.

The brunch also proudly features The Women of Goem from the tribal and Konkan communities of Goa offering a traditional, authentic, and unique Goan cuisine through a wide range of curated masala blends. Created by women Self-Help Groups that empower women to seek and attain social and financial independence. Representing various communities of Goa and the Konkan region, these masalas reflect centuries-old recipes passed down through generations. Sourced from local farms, these spice blends are a celebration of regional flavor and women’s empowerment—bringing together the essence of home cooking and the strength of collective enterprise.

More than just a meal, “Forgotten Flavors Of Goa” is a journey into the heart of Goa’s ancestral kitchens—where spices are not just ingredients, where every recipe has a story; and where cooking is an act of remembrance.

The mood is effortless and charming. Sunlight pours into the alfresco section, where a live band softens the air with just the right rhythm. Cocktails are composed with global excellence. Try the Tamarind Spice Highball with its hint of mischief, or the Olive Grove Spritz, a bright nod to Mediterranean simplicity. The menu doesn’t sit still. It shifts, surprises, and seduces. From Muradabadi dal served in rustic kulhads to Kashmiri Tabak Maaz, slow-cooked and soulful, to zesty Italian citrus grills and chaat that captures Delhi’s street-side heart, every dish brings with it a memory or a new moment to savour.

The dessert section will be helmed by Executive Pastry Chef Brendon Dewar, bringing refined artistry and global flair to the final course.

K3’s Sunday Brunch is priced at ₹4199++ for the non-alcoholic experience and ₹5499++ for the alcoholic package. It is hosted every Sunday from 12:30 PM to 3:30 PM at K3, JW Marriott New Delhi Aerocity.
