To honor this sentiment, Chef Gaurav Paul at Marriott Whitefield Hotel has curated a special menu that reflects the rich culinary heritage of Bengal. With a deep passion for his craft and a personal connection to these flavors, he presents a collection of rare and forgotten recipes from the noble kitchens of Bengal, alongside beloved classics and popular favorites. This menu is his labour of love and a heartfelt tribute to his own heritage, an experience no true food lover should miss.
Divided into three sections, the menu offers unique dishes like Rosogollar Korma, Mochar Chanokanno (stir-fried banana blossom with Gobindo Bhog rice and spices), Parshe Macher Tortora (mullet simmered in onion-red chili gravy), and Chingrir Hurra (a duet prawn recipe, paste & whole, from the shores of the Kirtonkhola River).
The classics bring timeless favorites like the Luchi, Chingri Malai Kari, Cholar Daal, Kosha Mangsho, while the popular section features every Bengali’s comfort food, from Aloo Diye Biriyani to Chilli Chicken and Dimer Devil. The dessert section crowns the feast with light and easy to digest Bengali desserts, soft and syrupy Rosogolla, creamy and fragrant Rosmalai, sweet and flavourful Mishti doi and Ladikenni, named after Lady Canning, are few to name. Chef Gaurav Paul will also be replicating some of his favourite cakes and pastries from the iconic Nahoum’s in Kolkata.
