The Levant region, known for its deep culinary heritage, spans several countries in the Eastern Mediterranean, including Jordan, Lebanon, Palestine, Syria and parts of Turkey, Cyprus and Israel. Renowned for its bold, aromatic flavors and time-honored techniques, Levantine cuisine reflects the region's diverse cultures and traditions.
Chef Adai’s culinary journey began in his grandmother’s kitchen, where he learned to prepare dishes like Mansaf and Muskhan using traditional methods. Over 14 years of professional experience, Chef Adai has refined his ability to honor these traditions while incorporating contemporary techniques, offering a fresh take on the cuisine that appeals to global tastes.
The exclusive menu celebrates the depth and diversity of Levantine flavors, showcasing iconic ingredients like olive oil, sumac, za’atar, tahini, and pomegranate molasses. The highlights of the menu include Chicken Wellington, a Levantine-inspired twist on the classic, featuring succulent chicken wrapped in golden puff pastry infused with herbs, served with a tangy fermented yogurt sauce; Kousa Mahshi, modern interpretation of the traditional stuffed zucchini dish, spotlighting the lesser-known seasonal ingredient kousa, beloved in Levantine kitchens; Mansaf, a quintessential Jordanian lamb dish, slow-cooked in a rich yogurt sauce and served over aromatic rice, offering a soulful taste of the Levant and other dishes are complemented by mezze platters, salads, and desserts, reflecting the region’s rich culinary traditions while embracing a contemporary flair.
Chef Adai ensures authenticity by sourcing high-quality ingredients, many imported directly from the Levant. Traditional techniques such as open-flame grilling, slow cooking, fermentation and hand-making bread are used to create flavors that are both timeless and innovative.
