Chef Flor Camorlinga, the force behind Michelin Bib Gourmand–recognized and Best Wine Bar, awarded Plonk in Mexico City, comes to Southern India for a one-night-only dining experience at The Ritz-Carlton, Bangalore.

Presented as a collaborative pop-up, the menu is co-created by Chef Flor and the culinary team at The Ritz-Carlton Bangalore, led by Executive Chef Saurabh Tyagi. While Chef Flor brings her signature techniques, global perspective, and a flavour philosophy shaped by her work across Mexico, Tokyo, Seoul, and Santiago, Chef Tyagi’s team anchors the experience with a nuanced understanding of local ingredients and the city’s evolving palate.

The experience unfolds as a five-course, wine-paired dinner, each dish distinct in character. It opens with a duck confit empanada, crisp pastry giving way to rich filling, lifted by spicy mayo and salsa verde. A kingfish tostada follows, bright with chiltepin chilli, mango, basil oil, and charred avocado. Gochujang-glazed fried chicken arrives lacquered and exact, its gentle spice offset by mandarin brightness and the saline pop of salmon roe. A Mexican interpretation of kimchi presents fermented grilled cabbage with composed acidity, layered with crisp onions and pomegranate for structure and lift. The lamb, slow-poached to remarkable tenderness and finished in a silken Mole Poblano, is served with carrot purée and broccolini,  a dish of depth, patience, and classical control.

The progression concludes with a dessert that lingers in thought as much as taste: a reimagined Honeycake, finished with miso caramel and caviar, where sweetness, salinity, and umami are held in deliberate balance.

The one-night gala dinner unfolds at The Market, The Ritz-Carlton, Bangalore’s global cuisine restaurant, offering a dining experience defined by world-class technique and culinary excellence.
