KOCHI (January 20, 2026) – Grand Hyatt Kochi Bolgatty announced that Colony Bar has been awarded Best Work in Sustainability at the 30 Best Bars – 6th Edition, one of India’s most respected platforms recognising excellence across the bartending and beverage community.

The recognition marks the second consecutive year the award has come to Kerala, following last year’s win by The Ivory Club at Hyatt Regency Trivandrum. Together, these honours highlight how disciplined teams and well-structured operational practices are shaping responsible and future-facing bar programmes across the region. For Grand Hyatt Kochi Bolgatty, the award reflects the sustained efforts of the Colony Bar team to integrate sustainability into daily operations, in alignment with Hyatt’s global philosophy of “Thoughtfully Sourced. Carefully Served.”

At Colony Bar, sustainability is not a standalone initiative, but a working principle embedded into everyday decision-making. This approach comes alive through The Bold Naadan menu, a collection of locally inspired cocktails developed using mindful sourcing and modern techniques. Signature creations include Portuguese Wharf, crafted using orange peels repurposed from Malabar Café; Kappa Kandari, featuring beetroot peel infusions; Garden Reverie, incorporating pandan and lemongrass trimmings from Thai Soul; and Colonial Preserve, which makes use of pineapple cores salvaged from Malabar Café.
