This February, Coriander Kitchen honours the culinary legacy with “Roots of Purvanchal”, a limited-period dining experience that brings the authentic flavours and rustic charm of Eastern Uttar Pradesh to the table. Set against the intriguing waterscape view, the menu will be available from 20th February to 1st March, 7pm-11pm. The experience invites diners to discover a cuisine that is comforting, personal, indulge in slow-cooked, earthy-flavored meals and rarely explored beyond its homeland.

Curated by Chef Shikha Singh, the menu celebrates the region’s culinary identity through homestyle age-old techniques, heritage ingredients and balanced spices that reflects the simplicity of Purvanchali cooking. Signature dishes from slow-cooked Aahuna Mutton from Champaran, known for its earthy, sealed-pot technique to hand-rolled Litti paired with smoky Chokha, a dish that carries the spirit of rural gatherings and shared meals. The menu also features Zameendar Chicken, a preparation rooted in rustic cooking traditions, alongside festive favourites such as Thekua cookies, giving a glimpse into the region's celebratory culinary culture.

Sharing his thoughts on the menu, Chef Shikha Singh says, “It’s an honour to celebrate the food of Purvanchal at Conrad Pune. It’s an emotion and a cuisine that brings people together and carries stories across generations. With Roots of Purvanchal, our intention is to present these dishes with honesty and respect, allowing guests to experience flavours that feel warm, nostalgic and incredibly real.”
At Roots of Purvanchal each plate tells a story of memory, migration and the kitchens that have shaped some of North’s most soulful flavours. Set within the welcoming ambience of Coriander Kitchen, the experience offers an opportunity to explore a regional cuisine that is often underrepresented on mainstream menus.
