Mumbai, December 2025 - Perched high above the Queen’s Necklace,DOME at InterContinental Marine Drive is set to unveil an all-new culinary and cocktail menu from 1st December 2025—an unveiling as evocative as the horizon it overlooks. 

Long regarded as Mumbai’s most iconic rooftop sanctuary, Dome showcases an atmosphere that feels suspended between dream and reality. The all-white lounge, touched by sea breeze and illuminated by the glow of the coastline, has always been a place where moments linger and evenings unfold with a certain cinematic grace. This new menu echoes Dome’s enduring spirit of reinvention, an invitation to explore flavours and textures crafted with the same intention that defines the view: to mesmerise, to soothe and to spark curiosity.

At the heart of this refreshed menu lies a philosophy of elevation and evolution. While Dome’s identity has been shaped by elegant small plates and modern mixology, the new offerings embrace a more layered narrative - one that blends global culinary influences with the rhythm and soul of Mumbai. Familiar comforts are reimagined with elevated techniques, while new creations draw from the city’s mosaic of flavours and the current trends of world cuisine.

Where Global Technique Meets the Soul of Mumbai

The new menu at Dome, crafted by Executive Chef Lalit Rai, is shaped by a philosophy of thoughtful sourcing, seasonal intuition, and the elevation of local ingredients through global techniques. Leading this direction are two signature creations - the Konkani Crab Bao, inspired by the western coast, and the Shiso and Betel Leaf ‘Wadi’, a refined reinterpretation of an indigenous favourite. Together, they set the tone for a menu that is quietly confident and rooted in craft.

The journey begins with the Pull Apart Pav offering a playful tribute to Mumbai’s Vada Pav; the Dome Truffle Kataifi Fries showcase delicate texture and indulgence; and the Mock Duck Siu Mai brings depth through a velvety blend of mushrooms and warm, savoury notes. The innovation continues with the Matcha Salmon Maki, marrying bold technique with balanced flavours, and the NZ Lamb Chop Schnitzel, offering a crisp, herb-bright finish. Dome’s 48-hour proved Sourdough Pizzas complete the menu with their fluffy flavourful and perfectly blistered crusts, an expression of patience and precision.

Together, these dishes form a menu defined by creativity, craft, and the desire to surprise through the simplest pleasures. 

Executive Chef Lalit Rai Says “This menu is the result of years of observing how people connect with flavour - emotionally, culturally, and intuitively. We wanted to create something that honours Mumbai’s rhythm while embracing global craftsmanship. The idea was never to overwhelm but to elevate, to take familiar ingredients and let them speak in a new dialect. This menu is our way of showing that comfort and creativity can coexist beautifully on the same plate.”

A Four-Chapter Cocktail Odyssey Crafted Against the Sea and Sky

Against the ever-changing canvas of the Arabian Sea, Dome’s renewed cocktail programme,  conceptualised by Kushkant Tripathi, Director of Food & Beverage - unfolds in four distinct variations, each crafted to complement the rooftop’s breathtaking panorama: Fruit Forward, Potent, Inventive, and Night Cap.

Our goal was to create cocktails that embody restraint, beauty, and intention,” said Kushkant Tripathi. “Each pour has been shaped to complement Dome’s natural drama, the wind, the horizon, the subtle glow of the city. This beverage programme is our ode to balance: bold yet graceful, contemporary yet timeless.

Fruit Forward cocktails bring bright, tropical energy to the menu - uplifting, refreshing, and effortlessly playful. Highlights include Dome Alaska’s island-inspired profile and Simaur Pride’s citrus-velvet balance, alongside modern twists like the clarified Melon Cream Soda and the subtly sweet–savory Tokyo Banana

Inspired by the playful idea of “drinking your own salad,” the inventive cocktails reimagine garden-fresh ingredients in liquid form. Each creation blends vibrant produce, herbs, and unexpected textures to deliver a multisensory experience—fresh, aromatic, and delightfully unconventional. Beet and Feta delivers an earthy, tangy profile, while the Caprese transforms the essence of a classic salad into a smoky, herb-forward sip.

Potent cocktails, in contrast, are crafted for those who prefer depth and bold character. The Wildberry and Cacao Lowball offers a rich, aromatic take, while the Shiso Highball introduces a lighter, herbaceous nuance that still carries complexity.

Night Cap cocktails close the evening with warmth and sophistication - the Ume Manhattan offering a fruit-toned riff on a classic, and the Sunset Sour delivering a comforting, softly spiced finish reminiscent of dusk in a glass.

With its new menu, Dome reinforces its status as one of the world’s most iconic rooftop lounges. As the sun dips beneath the horizon and Marine Drive’s lights begin to shimmer, Dome invites guests to rediscover the city from a fresh perspective, one thoughtfully crafted plate and cocktail at a time.
