DoubleTree by Hilton Bengaluru Whitefield, where warm hospitality meets inspired dining, proudly presents Beyond Paneer, a vegetarian food festival at 1882 that celebrates the richness of India’s regional cuisines through thoughtfully curated, vegetable-forward creations. The festival runs from 19th to 29th January 2026, inviting guests to rediscover vegetarian cuisine with dishes that balance familiarity with fresh, inventive perspectives.

Beyond Paneer moves beyond conventional vegetarian fare, drawing inspiration from the quiet wisdom of Indian home kitchens—where produce takes center stage, flavors evolve patiently, and every dish is crafted with care. Banana flower, yam, snake gourd, drumstick leaves, water spinach, Colocasia, and heirloom root vegetables from the heart of this culinary narrative, each chosen for its cultural resonance and inherent elegance.

The menu unfolds with restraint and intention. Familiar flavors are gently reimagined – palak finds depth through lentils and seasonal greens, millets lend texture and warmth, while coconut, indigenous spices, and time-honored techniques allow each ingredient to express its natural character. The result is composition that feels both evocative and modern, nostalgic without being predictable, refined without excess.

The festival menu also showcases an extensive selection of regional vegetarian preparations that reflect the diversity and depth of India’s culinary traditions. Signature dishes include Khosa Bata, Chamagadda Pakodi Fry, Kachur Saag, Dhokar Dalna, Potol Posto, Aratikai Thokku, Kappa Thoran, Mochar Ghonto, Kathal Ki Subji, Thod Die Daal, Kumro Saag er Chorchori, Soyabean Kheema Masala, Phool Gobi Halwa, Kaacha Kele Ki Bhurji, Moongwadi Masala, Chaltar Tok, Topa Kuler Chutney, Mochar Chop, and Thor Cutlet—each prepared with respect for regional techniques and thoughtfully balanced flavours.
