Rooted in Persian and Central Asian influences over centuries, this regal culinary spread found its way to Kashmir in the 14th century and has been an integral part of weddings and auspicious celebrations in the valley, ever since. 

Wazwan traditionally spans seven to thirty-six courses and is served upon a resplendent copper trami.  Guests gather around the trami to share food, laughter, and stories signifying a communion of shared plates, timeless recipes and an ode to Kashmir’s enduring culinary legacy. 

The enticing Wazwan menu at Merchants of Spice comes alive through four distinct experiences: Sabzi Thael, Kokar Traem, Maaz Traem, and Sath Seyn Traem. These spreads contain aromatic Rogan Josh, delicate Gushtaba, Rista meatballs, and crispy Tabak Maaz lamb ribs alongside vegetarian classics such as Buzith Tschaman paneer, Waazeh Palak, and more. Served on a grand Trami platter with Kong Batte rice, spiced Kahwa, and Kong Phirin dessert, every course offers a harmonious journey through the heart of Kashmir, promising both tradition and refined taste. 

Every dish of the Wazwan is crafted under the watchful eye of the Vasta Waza, the master chef leading his skilled brigade of chefs with precision and pride.
