Kolkata, January, 2026 –Novotel Kolkata Hotel & Residences invites food lovers to experience a bold new chapter at The Ministry of Kebabs (MOK), which has unveiled its newly reimagined menu this January, 2026, a curated showcase of fire-led flavours, regional kebab artistry, and immersive tableside indulgence.

A tribute to India’s diverse culinary traditions, brought together through the artistry of fire and flavour, the refreshed menu is rooted in heritage yet elevated with modern finesse—pairing thoughtfully curated chutneys, local marinades, and contemporary presentations. As tawa, tandoor, and sigree take centre stage, the experience unfolds as an immersive, tableside journey brought alive through MOK’s signature kebab trolley, creating a sensory celebration where every bite speaks of culture, connection, and craftsmanship.

The menu begins with an indulgent vegetarian selection that celebrates India’s grill heritage through layered marinades and fire-led technique. Highlights include Shahi Palak Chilgoza Tikki, a royal Awadhi spinach and pine nut patty pan fried to perfection, the fiery Guntur Mirchi Tandoori Paneer marinated in yoghurt and Guntur red chilli paste and grilled in the tandoor, and Bharwan Dhingri, whole mushrooms stuffed with spiced paneer, khoya, and nuts. The spread then moves into robust non-vegetarian favourites such as Dhaniya aur Pudina ke Seekh, juicy minced mutton infused with fresh coriander and mint, echoing flavours once foraged in royal hunting camps, alongside the regal Rajwada Kalmi Tandoor, spice-marinated chicken drumsticks inspired by the kitchens of Rajasthan and Madhya Pradesh, and Kundapuri Byadgi Prawns, roasted Byadgi chilli masala prawns finished with curry leaves for a bold Mangalorean punch.

The mains carry forward this heritage-led journey with slow-cooked signatures like Subah-e-Awadh Nihari, a marrow-rich mutton stew rooted in Awadhi tradition, paired with the regal Subz Korma Awadhi, mixed vegetables simmered in a luxurious onion-yoghurt gravy with poppy seeds and aromatic spices. Comfort takes centre stage with Dal MOK, black lentils slow-cooked overnight with butter, cream, and roasted spices, MOK’s tribute to the classic Punjabi Dal Makhni, while fragrant rice offerings include Kolkata Style Chicken Biryani, drawing from the city’s Awadhi influence, and Subz Dum Biryani, a nawabi-inspired vegetarian celebration finished on dum with saffron, vetiver, and royal basmati. Served alongside Mixed Vegetable Raita and breads like Ulta Tawa Paratha and Khameri Roti, the experience ends on a sweet note with Phirni in Mitti Kulhar and a timeless Kulfi, delivering a nostalgic finish that lingers long after the last bite.
