The fusion of Indian spices and cooking techniques with European ingredients has resulted in distinctive and flavorful dishes. The "Colonial Cuisines of India" at JW Kitchen will take guests on a culinary journey, celebrating the legacy of British, Portuguese, French, Dutch, and Mughal influences on Indian cuisine.
Each evening will focus on a specific region and its colonial influences, offering a curated menu that highlights unique dishes and flavours from that period.

British-Anglo Indian Cuisine (15th August): Delve into the fusion of British and Indian culinary traditions with dishes such as Fish Orly, Calcutta Club Cutlet, Dalhousie Chana Dal Ghoogni with Paorotti, Railway Mutton Curry, Dak Bunglow Chicken Curry, British Trifle Pudding, and Ledikeni.

Portuguese-Goan Cuisine (16th August): Savor the Portuguese influence on Goan cuisine with offerings like Choriz Pao, Balchao Roast, Rechado Rawa Fried Fish, and Serradura.

French-Pondicherry Cuisine (17th August): Enjoy the French colonial impact on Pondicherry cuisine with delicacies such as Bouillabaisse, Quiche Lorraine Tart, Braised Pork Roulade, Fish Meuniere, and Crème Brûlée.

Dutch-Malabar Cuisine (18th August): Experience the Dutch influence on Malabar cuisine with dishes like Meen Cutlet, Mushroom Pepper Fry, Attirachi Roast with Malabar Parotta, Chicken Schnitzel, Pachakari Ishtew with Kalappam, Malabar Pachakari Kurma, and Dutch Almond and Butter Cake.
The grand brunch on the 18th of August will bring together the best of all four colonial cuisines, offering an extensive buffet with a variety of dishes. Including Kazmi Kebab, Khumb Asaduallah Galouti, Paneer Teh-pe-teh, Junglee Maas, Ker Sangri Kofta Curry, ‘Changezi’ Chicken, Dal Maharani, Dahi ke Soole, Shahi Tukda, and Malai Gulkand Kulfi. Guests can watch chefs prepare signature dishes on the spot at live cooking stations, showcasing traditional cooking techniques and aromas. There will be interactive sessions where guests can engage with chefs through short presentations and interactions, learning about the historical and cultural significance of the dishes. Additionally, a selection of colonial-era-inspired cocktails and mocktails will be available to complement the food. The dining experience will be further enhanced with live music featuring classical and contemporary tunes from the colonial period.
