Curated by Chef Santosh Verma from the iconic Taj Nadesar Palace, Varanasi, the festival offers an evocative dining experience celebrating two of the city’s richest culinary streams — the purity of Sattvik vegetarian fare and the opulent, spice-laden dishes from the Muslim Gharana tradition.
Guests can begin their culinary journey with Banaras’ famous street-style chaats — tamatar chaat, aloo tikki, mathra chaat, and dahi wada, bursting with bold, tangy-sweet flavours. The meal then moves into a medley of vegetarian classics like Benarasi Kachori Bhaji, Hing Dhaniya Aloo, and Bhaji ki Tehari, reflecting the spiritual simplicity of the region. For those seeking depth and richness, the Gharana-inspired fare delivers with slow-cooked kebabs, regal quormas, and fragrant biryanis that carry the essence of age-old family kitchens.
