Relish the spice-laden richness of Hyderabadi Dum, the subtle sophistication of the Lucknowi Biryani cooked in the traditional Dum-Phukt style, the fragrant Kolkata style with its potato surprise, the earthy comfort of Ambur with a tender yoghurt marination, the coastal zest of Malabar, and the bold flavours of Dindigul with the distinct seeraga samba rice.
