Curated by Chef Ashlyn, the festival includes select in-house specialities prepared using her own recipes and ingredients, including Salt & Spice Pork, authentic Xacuti, Pork Vindaloo and Chicken Cafreal. She brings key ingredients from Goa such as traditional vinegar, black jaggery, Recheado masala and Cafreal masala, and prepares her own pickles, ensuring regional authenticity.

The menu presents a wide range of classic Goan dishes for varied palates, including cult favourites such as Prawn Balchao, Prawns Recheado, Crab Xec Xec, and Prawn Molho. The spread also includes beloved street-style and home-style preparations such as Choris Pao, Chicken Cutlet Pao, Prawn and Mushroom Rissois, and a live Ross Omelette Station. Comforting sides like Cabbage Foogath and Goan Potato Bhaji balance the flavours, while traditional desserts including Doce, Alle Belle, Dodol, and Serradura bring the experience to a fitting close.
