Bringing together three distinguished Hyatt bars under one roof, the takeover features an exclusive collaboration with Colony Bar, Grand Hyatt Kochi and The Ivory Club, Hyatt Regency Trivandrum, alongside Juniper Bar’s signature creations. The two-night celebration pays tribute to bartenders and the evolving cocktail culture through regionally inspired flavours, innovative techniques, and handcrafted cocktails.

Juniper Bar showcases two signature cocktails crafted as a tribute to bartending legends and the profession itself.
- The Professor’s Old Fashioned (Batched) honours the legendary Jerry Thomas, featuring sous-vide bourbon infused with cacao nib and orange, balanced with demerara syrup and aromatic bitters, and finished with a chocolate-covered cherry for a timeless, bold profile.
- Tommy’s Day Off is a refreshing mezcal cocktail inspired by the iconic Tommy’s Margarita, shaken with fresh lime, agave, grapefruit bitters, and finished with fragrant basil for a bright herbal lift.
All cocktails are priced at ₹1000 + per drink.
The Ivory Club, Hyatt Regency Trivandrum
- The cocktail selection from Trivandrum draws inspiration from Kerala’s rich culinary heritage and tropical produce.
- Mela blends fresh pineapple juice with fragrant nannari syrup, mint leaves, lime juice, basil seeds, tonic water, and white rum for a refreshing, herbaceous highball.
- The Feast offers a bold and layered profile featuring banana sacrum, Martini Rosso, cardamom pods, fresh lime juice, Stillabunt, bourbon whiskey, finished with aromatic notes of banana leaves and nutmeg.
- Tharavadu is a refined whisky-forward cocktail combining scotch whiskey, Martini Rosso, honey liqueur, Angostura bitters, chilled water, and block ice, elevated with a theatrical honey caviar garnish.
Colony Bar, Grand Hyatt Kochi
Rooted in coastal flavours and local ingredients, Colony Bar presents a vibrant trio of contemporary cocktails.
- Kallu Bar features tender coconut water paired with vodka and gin, layered with tonic water, bay leaves, black cardamom, sprouted coconut, wheatgrass, and tower ice for a refreshing tropical experience.
- Kappa Kanthari is a bold and spicy creation blending tequila with beetroot, jalapeño, kanthari chilli, coriander leaves, tapioca, and diamond-shaped ice.
- Portuguese Wharf brings together white rum, watermelon, lemongrass, orange, curd, and block ice for a creamy yet citrus-forward cocktail with coastal character.
