Neer, the signature open-air, poolside restaurant at Hilton Bengaluru Embassy Manyata Business Park, is set to take guests on a bold new culinary journey with the launch of its all-new Pan-South Indian menu on August 7, 2025. Already known for its refined coastal fare, Neer now expands its culinary scope to embrace the diversity of South India—bringing forgotten traditions, iconic flavours, and heirloom recipes to life in a modern, elevated format.
Designed as a soulful tribute to the region’s rich culinary heritage, the new menu is the result of deep research and passion. The culinary team, under the leadership of Executive Chef Gaurav Anand, has reimagined treasured dishes from the kitchens of Kerala, Tamil Nadu, Andhra Pradesh, and Karnataka, combining age-old techniques with a vibrant, contemporary sensibility. Guests can expect an exquisite line-up of regional delicacies—from Kerala’s Pidi Ulathiyathu, a rustic preparation of tender meat and hand-rolled rice dumplings, to Tamil Nadu’s Manchatti Meen Kozhambu, a tangy, slow-cooked fish curry served in traditional clay pots. Andhra’s unique Tamalapakulu Pakora and Karnataka’s beloved Mangalore Chicken Curry with crisp Kori Roti also feature on the menu, each dish telling a story of place, culture, and nostalgia.
A central highlight of the new offering is the revival of Uhoon Soru, a lesser-known one-pot cooking style that predates the biryani. This ancient tradition is brought back to the table through modern interpretations like the Avakai Biryani, layered with the bold tang of raw mango pickle, and the Adukku Attu Erachi Biryani, a regal lamb preparation that captures the grandeur of celebratory feasts. The menu is complemented by a thoughtfully crafted regional beverage list featuring cocktails and heritage drinks designed to enhance every note and nuance of the spices and flavours.
Neer’s new dessert section continues the celebration of tradition with indulgent creations such as Panchamirtham, a sacred fruit-and-jaggery blend; the delicate Putharekulu, a paper-thin sweet from Andhra Pradesh; and Madurai’s iconic Jigarthanda, a cooling finale to the meal.
