Drawing inspiration from the royal kitchens of India, Royal Vega offers a thoughtfully curated menu that is rooted in the principles of Ayurveda – the ancient science of life and holistic well-being. Currently, guests can indulge in the Shishir Ritu Menu that offers an array of sumptuous vegetarian dishes that highlight the flavours of the season, including Rajma Tikkiya (handcrafted grilled patties of red kidney beans, stuffed with hung curd, green spices, and mint masala), Paneer Kali Maricika (delicate rolls of Indian cottage cheese filled with tart plum paste-flavoured chenna, served in a cucumber seed gravy delicately spiced with star anise), Kamalini Kofteh (dumplings of lotus stem in a rich onion and brown almond gravy, garnished with nutmeg and green cardamom), Dal Adhav (a combination of five lentils, cooked with tomatoes and tempered with red chillies and cumin), Sarson Ka Saag (slow-cooked mustard leaves and bathua tempered with red chillies and desi ghee, served with white butter and crushed jaggery). In keeping with the season, the menu also features delightful desserts crafted from the finest seasonal fruits.
