Seasonal Tastes at The Westin Hyderabad Mindspace is set to transport guests to the royal kitchens of Rampur with an extraordinary dining experience from November 4th to 8th, featuring a special Popup Dinner with Chef Osama Jalali. This unique culinary showcase will immerse diners in the rich and historic flavors of Rampuri cuisine, a refined and lesser-known tradition that highlights the diversity of India’s food heritage.

Rampur, located just 150 kilometers from Delhi, is a princely state that played a significant role in the evolution of North Indian cuisine. During times of conflict, it became a sanctuary for master chefs from Delhi, who found refuge there and contributed to the blending of Mughlai, Awadhi, Rajput, and Afghani influences. The result was a sophisticated “courtly cuisine,” marked by the use of distinct ingredients and complex culinary techniques that were perfected in Rampur’s royal kitchens.

Known for its use of rare and aromatic elements such as lotus seeds, pan ki jad, khus ki jad (roots), and sandalwood, Rampuri cuisine offers flavors that are both unique and deeply nuanced. A standout dish is the Taar Qorma, a rich and decadent mutton or beef curry topped with a layer of flavorful fat, or ‘taar.’ In keeping with tradition, diners will savor the rich and aromatic taar, an experience that reflects the opulence of Rampuri dining.
