Pune, 14th February 2025 : Chingari, the iconic address in Pune known for the rich Awadhi cuisine, is celebrating the rich culinary heritage of Awadh, passed down through generations of passionate cooks and food lovers. Now, with the launch of its thoughtfully curated new menu, Chingari brings together time-honored recipes and contemporary interpretations, blending tradition with modern flair to create a unique dining experience
The menu is a culinary story through the years, featuring dishes that have been enjoyed for centuries passing dishes that alongside contemporary twists and then take it up a notch with modern interpretations.
Crafted by Master Chef Gulam Qureshi, who hails from a family steeped in culinary tradition, and brought to life under the guidance of Supreet Roy, General Manager of Sheraton Grand Pune Bund Garden Hotel, the concept beautifully marries legacy with creativity.
The menu is a culinary story through three generations namely Rivaayat (Traditional), Virasat (Modern) & Andaz (Contemporary). The menu is divided into three distinct sections—each representing a different generation and era of Awadhi cuisine, offering a unique flavor journey
Rivaayat (The Grandfather – 1st Generation) – Rooted in tradition, "Rivaayat" pays homage to time-honored recipes and cooking techniques, reflecting the culinary wisdom passed down through generations. This section captures the essence of traditional flavors, prepared as they were in their origins, to evoke the authenticity and nostalgia of Awadhi heritage.
Virasat (The Father – 2nd Generation) – Bridging past and present, "Virasat" reinterprets classic dishes with subtle modern adaptations, embodying the balance between preserving legacy and embracing progress. This section symbolizes a refined take on Awadhi cuisine, incorporating new ingredients and creative techniques while respecting the foundational flavors of each dish.
Andaz (The Son – 3rd Generation) – Representing the evolution of tradition, "Andaz" brings a contemporary twist to Awadhi classics. This section embraces bold fusion elements and inventive presentations, blending Indian and global flavors to create a fresh, vibrant culinary experience. It showcases the creativity and forward-thinking approach of a new generation, ensuring the Awadhi legacy remains relevant and exciting for today’s connoisseurs.
Each dish reflects this evolution, blending nostalgia with bold innovation. The Reshami Kebab honors its roots before evolving into the Nawabi Tikka and finally transforming into the inventive Makhana-Crusted Chicken Kebab, a true fusion of old and new.
In the main course, the timeless Nalli Ki Nihari reimagines itself as Nalli Gosht, before taking on a contemporary form with Sous Vide Chicken Roulade with Nihari Sauce, marrying classic flavors with modern technique.
Even the breads tell their own story—from the traditional Roomali Roti to the refreshing Pudina Paratha, ending with the playful French Onion and Cheddar Kulcha.
Desserts, the grand finale, trace the sweet legacy from the humble Seviyan to the decandent Warqi Angoori Rasmalai, culminating in the Saffron and Fennel Crème Brûlée, where tradition meets creativity in every bite.
