ITC Grand Chola unveils the all-new Madras Pavilion, marking a new era for one of Chennai’s most iconic dining destinations. While the design has transformed into bolder and more vibrant colours, the soul of Madras Pavilion remains rooted in comfort global flavours with a focus on Regional, Pan-Indian, Asian and Western fare. The new space is designed around a large central live kitchen and every element from the ambient lighting to the thoughtfully designed seating zones, created to accommodate large family gatherings and formal business conversations. The music of the three-meal restaurant focuses on global hits and also transitions to the occasional set of Tamil favourites.

MPR #1639 – The New Private Dining Experience

Named after the founding year of Madras, Madras Pavilion’s Room #1639 is a multi-functional private space accommodating 25–30 guests, and perfectly suited for chef-led tasting menus and beverage-paired dinners to business luncheons and cherished family celebrations. The private dining space is equipped with a big screen that can play real-time sporting events or even business projections of formal meetings, over a meal. The finest offering at MPR #1639 is the signature Ellai Sappad, served traditionally on a banana leaf. The menus are the true “showcase meals in five-star comfort” for diners wanting to experience a taste of the South in its most authentic form. This experience is available only on prior reservation with 24 to 48 hours’ notice in vegetarian, non-vegetarian and seafood options.

The Hero – The Food

Madras Pavilion’s culinary repertoire is a celebration of diversity — from traditional South Indian meals served on banana leaves to refined global delicacies crafted with contemporary flair. The appetiser selection is bold and inventive, featuring delights like Madras Fried Chicken, Cheese-Chilli Seekh Bites, Vazhapoo Wasabi Fritters, Ghee Roast Tacos, and indulgent Bolognese Kulchas. Steamed preparations are equally exciting, with Edamame and Corn Shumai, Prawn Hargao, BBQ-ed Lamb Baos, Thatta Idli Plates, and seasonal Sundal Bars adding variety and flair. European influences come alive through dishes such as Spinach and Ricotta Florentine, Lamb and Mozzarella Lasagne, Beet and Pecan Muffins topped with Fontal Cream, and glistening Honey-Glazed Pork. The “Local Love” section celebrates South Indian favourites like Kozhi Chettinad, Madras Meen Curry, Vendakkai Korma, and Broccoli Usli. The biryani spread features Gosht Dum Biryani, Ambur Kozhi Biryani, and the regal Sarai Gosht ki Biryani. Asian influences find their place too, with Lotus Stem in Honey-Chilli Sauce, Silken Tofu in Black Bean Sauce, Sliced Fish in Chilli Garlic, and Beijing-Style Braised Lamb, creating a dynamic balance of flavours. Desserts are decadent yet diverse, from Verrines and Entremets to Strudels, Crêpes, Gelatos from Yura, and traditional puddings, each crafted to please every palate. On the Southern front, favourites include Madras Kozhi Curry, Tamarind-Rubbed Seer Fish, and soft lace-edged Appams served with fragrant coconut stew. Global comfort dishes such as wood-fired thin-crust pizzas, butter-poached prawns with saffron risotto, and handmade pastas or mezze boards cater to international tastes. For the health-conscious diner, the menu also features gluten-free Buddha bowls, cold-pressed juice pairings, and a vibrant salad bar brimming with microgreens and fresh produce, making Madras Pavilion not just a buffet, but a thoughtfully curated culinary experience.

“Vera Level Unlocked”: The Beverage Program

Madras Pavilion unveils a blockbuster beverage program “Vera Level Unlocked”, that is a celebration of all things Madras, nostalgia, flair, and unforgettable flavour. Designed with bold colours and cinematic storytelling, each beverage pays homage to the city’s cult classics while introducing a refreshing contemporary twist. The program stars seven signature regional specials, beverages with dual roles, crafted as refreshing mocktails offering versatility and flair in every pour. Available as single serves or bottle formats that serve three to four guests, these creations bring a sense of togetherness to every table. From Cheeky Chikoo and The Jasmine to Inji Kaapi, Jamun Soda, Summer Roots, Teq-No Guava, and Marina 63, each drink tells a story rooted in local ingredients and nostalgia. Complementing these are beloved Madras favourites — Goli Sodas in lemon, rose, and grape and the Rose and Badam Milk to name a few. From the first pour to the final sip, it’s all heart, all Madras – all “Vera Level!”
