The House of Suntory brings Senior bartenders from the multi-award-winning Singapore bar to take over The Eau Bar on 8th February 2025.

Hailing from Sicily, Saverio Casella is the Principal Bartender at Jigger & Pony, Singapore. With a knack for interpreting situations with nuance and delivering convivial hospitality with every interaction, Saverio crafts cocktails that evoke emotions and leave a lasting impression.

British Singaporean James Iain is the Senior Bartender at Jigger & Pony. His flair for crafting exquisite cocktails is matched only by his skill at engaging guests with thoughtful hospitality.

On 8th February 2025, Saverio Casella and James Iain will be showcasing four signature cocktails with spirits from The House of Suntory portfolio from the SMASH menu at Jigger & Pony, Singapore at The Eau Bar at The Oberoi, Mumbai. Oberoi guests can expect:

Godfather: It was during 1930s Prohibition in America that the Godfather cocktail was born; a simple creation with just two ingredients - Scotch whisky and amaretto. The Jigger & Pony reinvention is crafted with Hibiki and house-made progressive amaretto - a blend of akai umeshu and a complex plum kernel spirit, for a sweet and salty alchemy on days when you feel like a boss.

Ugly Tomatoes: Celebrates the beauty of imperfection. Crafted from Japanese gin, which artfully balances 6 unique Japanese botanicals to create a perfectly balanced multi-layered gin that complements the full, savoury notes of ‘ugly’ heritage beefsteak tomatoes. The gin sings with mango, lime, ginger and spices, while the backbone of the cocktail is a blend of caraway seeds, cumin, and fennel - traditional bedfellows in tomato dishes.

Super Lemon Highball: Hailed as every bartender’s preferred drink, the Jigger & Pony Super Lemon Highball takes this classic cocktail to another level. Lemon water is carefully blended with single malt Toki Suntory whisky and soda water to harmonising effect, before carbonating and adding the final touch of a lemon jelly crafted from concentrated lemon.

Lycheetini: The Lycheetini is the reinvention of a classic martini with natural lychee flavours extracted through the low-temperature distillation of lychee puree. Lychee vermouth crafted from Japanese sweet potato shochu is shaken with lychee cordial and gin (or Japanese Vodka) and garnished with a lychee jelly. Best enjoyed anytime, any day and more than once.
