Jalali, a food historian and researcher, has spent years traveling across India, collecting heirloom recipes passed down through generations. At this exclusive showcase, diners will taste meticulously recreated dishes like Dahi ke Long Chide, delicate kebabs marinated in yogurt and grilled to perfection, and Murgh Chargha, a deep-flavored specialty from Lahore, crisp on the outside yet meltingly tender within. There’s also Zafrani Paneer Qaliya, a saffron-infused cottage cheese delicacy, and the robust Chole Murgh, a rare combination of chickpeas and chicken that reflects the rustic kitchens of undivided India.
The highlight of the menu is Nihari, a dish steeped in nostalgia—slow-cooked overnight with hand-pounded spices, just as it was once prepared in the royal kitchens of Puraani Dilli. The meal culminates with Qimami Seviyan, a decadent caramelized vermicelli dessert infused with dried fruits and fragrant cardamom.
