Goa’s culinary heritage is a melting pot of Portuguese and Konkani influences, a legacy passed down through generations. However, some of its most treasured recipes have faded from modern menus. DoubleTree by Hilton Goa – Panaji is bringing them back with an exclusive dining experience, "Lost Recipes of Goa", curated by Chef Peter Fernandes at Feliz from 21st to 2nd March 2025..

This gastronomic journey delves into rare, time-honoured recipes, once staples of Goan households, now revived in a feast of tradition and flavor. Diners can savor dishes like Chicken Almona – A forgotten Portuguese-Goan delicacy, this tender chicken cutlet is a bite of history, Fish Almona – A coastal favorite, this traditional fish cutlet is a testament to Goa’s maritime influences, Veg Risois – Crispy, deep-fried pastry pockets filled with a creamy vegetable mixture, inspired by classic Portuguese flavours,Stuffed Crabs – A delicacy where crab meat is mixed with Goan spices, stuffed back into the shell, and either baked or fried, Pork Vindalo – A classic Goan-Portuguese dish where pork is slow-cooked in a spicy, vinegar-based masala with garlic and chillies, Kazaracho Stew – A traditional Goan stew made  in weddings with vegetables and meats like beef, pork and chorizo, slow-cooked in a mildly spiced gravy, Prawn Curry – A staple Goan dish featuring prawns simmered in a coconut and spice-infused gravy, often served with rice and many more.
