Indulge in a special culinary chapter from the royal heartland of Rajasthan. Laapi Chokha - a traditional Rajasthani experience curated by Chef Sangeeta Dhar and Chef Vimal Dhar. Both renowned consultants and experts in the cuisine, they have crafted this one-of-a-kind dining experience for Maya. Every dish is a journey into the soul of rural Rajasthan and a celebration of traditional flavours and rustic recipes from the heart of Mewar and Marwar. Thoughtfully curated through deep research, each dish pays homage to the ancestral kitchens of rural Rajasthan where food was more than sustenance – it was ritual, culture and identity.

Menu

The menu features a complete experience with appetisers, mains, accompaniments and desserts. Discover a blend of royal delicacies and rustic favourites from Kurma Kachori and Ghoogri Chana Ka Chownk to the bold Afeem Maas, and indulgent, lesser-known desserts like Lehsun Ka Halwa and Parodi.

Every dish tells a story passed down through generations, celebrating the spirit and soul of Rajasthan.

About Chef Sangeeta Dhar:

Dr. & Chef Sangeeta Dhar is an Associate Professor, Food Production at the Institute of Tourism & Hotel Management, Pacific University, Udaipur. Her research works have been published by Research India Publications, Delhi. Over the years, she has tenured and been associated with several notable hotels chains. She is an active board member of several prominent chef societies in India. Not only has her craft in Rajasthani cuisine enabled her to win many accolades, she has also been a part of several culinary projects and events.

About Chef Vimal Dhar:

Chef Vimal Dhar is a Food & Beverage consultant and a highly experienced chef with a passion for perfecting culinary specialties. A Founder President of Royal Rajasthan Chefs Society, Chef has been a part of several notable hotel chains in India. Not only has Chef Vimal been recognised by several international publications, he has also been a part of several culinary projects and events.
