Designed to honour both tradition and innovation, the Thali brings together sattvik flavours inspired by Uttarakhand’s heritage and interpreted with global finesse.
Curated by Pilibhit House’s talented chefs, the Thali unfolds as a soulful journey. It begins with saffron-kissed Kesariya Thandai made with Uttarakhandi almonds, leading into starters such as Sakarkand ki Tikki and refreshing Seasonal Fruit Raita. Festive favourites are reimagined with local traditions, from sweet-tangy Khatta Meetha Sitafal – a pahadi pumpkin delicacy – to vrat-style Paneer Makhanwala, balancing simplicity with indulgence.
The main spread highlights both familiarity and refinement. Jhangora Pulao is paired with spiced Pahadi Aloo with Sabudana and crisp Kuttu ki Puris. Locally sourced water chestnuts lend delicacy to the Singada Curry, while accompaniments such as Bhangjeera Chutney and Sabudana Papad add distinctive Garhwali notes.
