Concept Overview
As a chef rooted in the stories and flavours of Bengal, I am proud to present a seasonal culinary celebration inspired by two of India’s most iconic mango-producing regions—Murshidabad and Malda. This concept highlights the rich mango heritage of these regions through thoughtfully curated dishes, each honouring the terroir, texture, aroma, and legacy of Bengal’s finest summer fruit.
Why Murshidabad & Malda?
Murshidabad mangoes, like Begumpasand and Himsagar, are known for their aromatic elegance and fine pulp—fruits once relished in Nawabi courts. Malda, the “Mango Mecca” of Bengal, is home to Fazli, Langra, and Lakshmanbhog—known for their bold flavors and distinct textures. Each variety tells a story of land, climate, and tradition. These mangoes are not just ingredients—they are seasonal guests of honour that demand celebration.
