Awadhi cuisine has always been defined by patience, slow cooking, and flavours that reveal themselves over time. Shaan-e-Awadh at Spice Terrace celebrates the traditions of Nawabi kitchens through a thoughtfully curated experience by Chef Mohammad Amir Qureshi, Sous Chef at Spice Terrace, JW Marriott Hotel Bengaluru.

The experience begins with a traditional welcome, as guests are greeted with an attar-scented towel and a glass of saffron sharbat. This is followed by a tableside unveiling of a sealed dum pot, where rising aromas quietly set the tone for the meal ahead.

The menu reflects the depth of Awadhi cooking through dishes that are rich yet balanced. Highlights include the comforting Gosht Yakhni Shorba, the Saboot Lobster slow-roasted in a yoghurt-based Awadhi masala, and the smoky Bhatti ka Kala Murgh Tikka. Mains such as Murgh Handi Qorma, Meher Paneer, Koh-e-Awadh, and the fragrant Spice Dum Biryani form the core of the experience, while Kalinga Machli, cooked with mustard, cumin, and chilli, adds a bold seafood note.

  Classic desserts like Bombay Falooda and Shahi Tukda Asal provide a familiar finish, complemented by Awadhi-inspired cocktails and well-considered non-alcoholic pairings. Set in the open-air setting of Spice Terrace, Shaan-e-Awadh offers a refined, flavour-led celebration of Awadhi cuisine and its time-honoured techniques.
