Bengaluru, February 2025 : Shangri-La Bengaluru presents an exclusive culinary pop up by Chef Tetsuya Hattori, bringing an immersive Japanese dining experience to the city from 25th February to 1st March at Yataii.
Rooted in the traditions of washoku, Chef Hattori’s philosophy celebrates seasonality, craftsmanship, and ingredient integrity. His cuisine reflects balance and simplicity, drawing on classical Japanese techniques such as precise knife work and meticulous dashi preparation, while embracing subtle modern refinement.

The specially curated menu celebrates both vegetarian and non-vegetarian Japanese classics with nuanced interpretations. Guests can begin with delicately balanced starters such as Avocado & Tofu Salad, Vegetable Tempura, Salmon & Avocado with Salsa Sauce, and Prawn Tempura, followed by comforting bowls of Japanese-Style Soup Curry and sesame-rich Tantan Udon.
The mains reflect Chef Hattori’s mastery of harmony and flavour, from Eggplant with Miso Sauce, Grilled Mushrooms with Leek Butter, and Thick Asparagus with Mushroom White Sauce, to heartier preparations like Surmai Miso Stew, Chicken Nanban, and Lamb Chops Confit with Japanese-Style Steak Sauce.
Concluding with refined desserts including Dorayaki with Matcha Cream & Strawberries, Warabi Mochi, and a delicate Flan with Fruit & Whipped Cream.
