(New Delhi, January 2025) Shangri-La Eros New Delhi welcomes gourmands to an extraordinary Chef Pin pop-up from 16 to 18 January 2025, featuring the culinary brilliance of Chef Dakshata Agarwal and Chef Archana Dhawan at the hotel’s international cuisine restaurant, Tamra.
Guests are invited to a dining experience that beautifully balances global flavours and regional authenticity.
Chef Archana Dhawan’s signature selection features the crispy Nadur Monji, a fried snack prepared from lotus stems and gram flour, delicate Chaman Kanti and aromatic Nadur Aloo Adrek Mond, while non-vegetarians can savour the succulent Chicken and Mutton Kanti alongside the
traditional Talite Gaad. At the live theatrical kitchens, witness the artful preparation of Kabar Gah and the classic Kaladi Kulcha, each bringing its own story of Kashmir's rich culinary heritage to your table.
The main course presents a grand celebration of Kashmiri flavours, where traditional recipes meet timeless cooking techniques. Vegetarian delicacies include the famous Dum Aloo, aromatic Chaman Tamatar, and the distinctive Chaman Roganjosh, complemented by the hearty Haak and Kashmiri Bhaderwah Rajma. The non-vegetarian assortment is as wide with its legendary Mutton Roganjosh, delicate Yakhni and unique Masch Aloo Bukhara, while fish enthusiasts can relish both Tamatar and Nadur preparations. Each dish is served with a selection of bread, including Kashmiri Phulka accompanied by authentic chutneys - from the nutty Walnut to the tangy Muli and Anardana Pudina variations. Guests can end their meal with the royal Saffron Kheer, and complete the experience with a warming cup of Kahwa, Kashmir's beloved spiced tea.
While Chef Archana Dhawan brings the essence of Kashmir to your plate, Pastry Chef Dakshata Agarwal completes the experience with her signature dessert collection. The sweet finale features delicate Chiffon Cakes in two variations - a fresh Strawberry Kiss topped with Chocolate Strawberry Panna Cotta and the rich Chocolate Kiss is finished with Dark Chocolate Cookie Soil. The indulgence continues with a velvety Chocolate Mousse Caramel adorned with dark chocolate elements, and the standout Bailey’s Chocolate Egg, which guests can enjoy at their table or take home as a memorable treat. Each dessert brings together classic techniques with contemporary presentation, offering a perfect closing to the experience.
