(New Delhi, September 2025) Shangri-La Eros New Delhi invites guests to relish a distinguished culinary sojourn this September at its award-winning international cuisine restaurant, Tamra. From 4th to 6th September 2025, the hotel will present an exclusive showcase of the royal Baoni Cuisine of Awadh, curated in association with Chef Pin and brought to life by Chef Dania Farooqui, a descendant of this princely tradition.
Baoni, a princely estate in present-day Uttar Pradesh, is known for a special culinary tradition that flourished under the patronage of its Nawabs. Rooted in slow-cooked delicacies, refined spices, and royal hospitality, Baoni cuisine carries a lineage of recipes that have been preserved within families for generations but seldom revealed beyond their walls. This special promotion revives that regal heritage, giving Delhi an opportunity to experience flavours once reserved for noble tables.
Chef Dania Farooqui, who traces her ancestry to this gastronomic legacy, has devoted more than a decade to rediscovering and perfecting these recipes. Her culinary journey, enriched through her association with Lucknow’s esteemed Nemat Khana and her collaborations with Chef Pin, has positioned her as a custodian of Awadhi traditions. At Tamra, she will serve an evocative repertoire, succulent kebabs, fragrant qormas, slow-cooked biryanis, delicate dals, hand-rolled breads, and royal desserts, each prepared with authenticity and respect for tradition.
Over three days, the menus will spread like a royal dastarkhwan, offering new experiences each day. Commencing the experience, diners will savour vegetarian appetisers such as Veg Samosa and Paneer Cutlet, alongside non-vegetarian classics like Shami Kebab and Mutton Qeema
Samosa. The main course brings together Dal ke Bhapauri and Miloni Sabzi, with rich preparations of Mutton Kali Mirch and Mutton Pasanda, complemented by the rustic Chana Dal Gosht. A live counter enhances the feast, paired with Mutton Dum Biryani and Zeera Rice. Desserts include the rich Qewami Sewai and Zarda.
The second day introduces vegetarian starters of Dhaniya Aloo and Mangorey, balanced by non-vegetarian delicacies like Kachche Qeeme ke Kebabs and Chicken Qeema Samosa. Main dishes include Zafrani Paneer and Mangorey ka Estew, while the non-vegetarian spread features Mutton Korma, Khichda, and Murg Makhmali, paired with Moong Dal Palak. Guests may enjoy the live counter, along with fragrant Chicken Biryani and Vegetable Pulao. The sweet ending arrives with Sheer Qorma and Zarda.
Concluding day delights with vegetarian appetisers such as Dahi ki Phulki and Aloo Tikki, joined by non-vegetarian bites of Fish Fry and Keema Pakodi. The main course includes Aloo Palak and Paneer Capsicum, complemented by Tale Aloo Ghosht ka Salan and Chicken Do Pyaaza, alongside comforting Tadka Dal and a live counter. Rice selections of Mutton Yakhni Pulao and Baghare Rice are served, while the royal feast concludes with Rasawal.
Across all three days, every menu is graced by the royal breads of Baoni Roghni Tikiya and Warqi Paratha, served warm and freshly baked, reminiscent of their place on the Nawabs’ own dastarkhwan.
The three-day experience is designed as a confluence of heritage and luxury, bringing cherished Baoni traditions into the graceful setting of Shangri-La Eros New Delhi. Guests will be welcomed into an atmosphere where recipes are not just served but narrated through their aromas, textures, and history. With this, Tamra becomes a backdrop for rare cultural expressions, celebrating cuisines that deserve to be remembered.
The experience will be available for lunch and dinner at Tamra from 4 to 6 September 2025, priced at INR 3,200 plus taxes for lunch and INR 3,500 plus taxes for dinner per person.
