Taj Bangalore’s signature Indian restaurant, Tamarind, known for its refined North Indian fare and elegant tandoor specialities, is set to host an extraordinary pop-up from 10th to 13th July 2025, bringing the iconic flavours of Karavalli, Vivanta Bengaluru, Residency Road, to the city’s premier luxury address.

For over three decades, Karavalli has set the benchmark for authentic South West coastal cuisine in India. Celebrated for preserving time-honoured recipes and culinary traditions from the spice-laden kitchens of Karnataka, Kerala, and Goa, Karavalli has earned its place among Asia’s finest restaurants, with a legacy steeped in regional storytelling and gastronomic excellence.

At the helm of this special showcase is Chef Naren Thimmaiah, the culinary custodian of Karavalli’s legacy, in collaboration with Executive Chef Deva Kumar and the talented team at Taj Bangalore. Together, they present a thoughtfully curated multi-course menu that pays tribute to the coastal belt’s rich culinary heritage, brought to life within Tamarind’s warm, sophisticated setting.

Guests can look forward to signature dishes such as the Meen Porichathu (shallow-fried black pomfret), Attirachy Ularthu (Travancore-style lamb roast), and Koli Barthad (Coorg-style fried chicken), alongside vegetarian delicacies like Maavinakai Menaskai (preserved mango curry), Patrade (spiced colocasia leaf rolls), and Enne Badnekai (brinjal relish). Traditional desserts such as Ragi Manni, Kashi Halwa, and Ada Pradhaman offer a perfect, nostalgic finale to the coastal feast.

In a unique twist, Tamarind’s bar will feature Tamarind-inspired beverages, specially designed to complement the bold coastal flavours. Expect modern interpretations like the Nawabi Mist, a thandai-kissed vodka cocktail evoking the elegance of Lucknow; the Pink Mirage, a beetroot and coconut-infused tribute to Jaipur; and the striking Mango Lassi 2.0, a crystal-clear, milk-washed reinvention of the classic summer favourite.

Set against the backdrop of Taj Bangalore’s inviting interiors, open kitchen and curated wine room, this collaboration promises not just a meal, but a rare, immersive culinary experience—where the coastal kitchens of Karavalli meet the contemporary sophistication of Taj Bangalore.
