(Singapore, 28 October, 2025) Following the successful launch of Akira Back last month, The Henderson is proud to unveil its latest innovative concept - Peridot - which is set to open imminently at Summit 38 on the 38th floor of The Henderson.
Peridot is a bold new concept that pushes the boundaries of design, mixology and cuisine. With its groundbreaking cocktail programme which celebrates the rich “terroir” origins of each drink, a revolutionary fermentation-forward plant-based haute cuisine offering, and an extraordinary collection of rare spirits, all in a surreal lime-green space with incredible views over Hong Kong, Peridot is a truly extraordinary new venue which is set to shake up the cocktail scene in Asia.
Terroir-inspired Cocktails by François Cavelier
Central to Peridot’s unique approach to cocktails is its pioneering Global Terroir Cocktail Programme curated by Director of Beverage François Cavelier. This quarterly-rotating visionary initiative celebrates the “terroir” or unique environmental factors such as geography, climate and soil that influence the characteristics of the spirits. Each quarterly programme explores the landscapes where these spirits are crafted, as well as the stories of the passionate producers and culinary influences that have shaped their drinking culture.
The debut chapter transports guests to Kagoshima, Japan, a seaside city on the country’s Kyushu island known for its high-quality sweet potatoes and craft shochu production - thanks to the rich minerality of the soil from the Sakurajima Volcano. Peridot brings these elements to life in cocktails that honour Kagoshima’s agricultural and artisanal heritage, featuring an exquisite collection of Satsuma Kiriko glassware and Tateno Pottery.
Highlights include The 3 a.m. Whisky, an inspiring late-night mingling of spirits, featuring Kanosuke single malt whisky as the main spirit base, accented with Maillard black apple decoction, Dolin rouge vermouth, and a touch of Kanosuke whisky yuzu chocolate, leaving the sweet apple and whisky lingering through the hours.
Nude Study is a sensual portrait painted with flavour profiles of citrus and pepper, highlighting Akayane Yuzushu with Ketel One vodka as its base spirit, while Timur pepper cordial and hot bitters turn up the heat with a Japanese citrus cloud as garnish.
Durian’s Consent is a bold move where the sweet funk of Musang King durian is playfully cradled and showcased in a base of Daiyame 40% Imo Shochu, Havana Club 3-year Rum, and Wray & Nephew Overproof Jamaican white rum.
The beverage programme extends beyond terroir-inspired cocktails to Peridot’s extraordinary collection of rare spirits, featuring limited-edition and small-batch bottles sourced from around the world. From vintage single malts to artisanal agave spirits, this curated selection invites aficionados to explore the finest and most exclusive offerings available. Some of these rare bottles can also be purchased from Peridot and delivered to guests the next day.
Fermentation-forward Plant-based Haute Cuisine by Lisandro Illa
Peridot’s groundbreaking cocktail programme is complemented by an equally ambitious and pioneering plant-based culinary programme conceptualised and crafted by world-renowned culinary artist Lisandro Illa. The talented Argentinian Chef who started his early career at Copenhagen’s legendary Noma and Popl brings plant-based cuisine to a new level of sophistication and flavour. Many of his dishes involve complex fermentation techniques and most take more than 48 hours to prepare.
Lisandro’s plant-forward haute cuisine shines in both refined bar snacks and thoughtfully curated 3- or 4-course lunch tasting menus. Offering exclusively plant-based dishes at a landmark destination bar is a bold and inspiring concept — and Chef Lisandro’s vibrant, flavour-packed creations redefine expectations, proving that vegetarian cuisine is just as indulgent, exciting and crave-worthy as any other.
His dishes turn familiar ingredients into new creations, such as transforming cashews and pine nuts into cheese and using watermelon as cold cuts. The small bites standout creations include Earth and Sea Caviars and Golden Sparassis Crispa Mushroom Fries, which showcase the interplay of textures and flavours. Highlighting the most innovative fermentation techniques, Chef Illa’s signature dish, the Fleshy Fruits Cold Cuts, masters nut-based cheeses and fruit-derived charcuterie that offers a multisensory experience promised to be surprising and satisfying. Every dish reflects weeks to months, or even years, of meticulous experimentation and a commitment to creating an unforgettable dining experience.

Peridot sets a mellow mood with its comprehensive entertainment programme featuring soulful live performances from Thursday to Saturday by a talented group of musicians including a pianist, internationally acclaimed saxophonist Veronika Semylit and line up of DJs for the late nights until 2 a.m.

The surreal interior of Peridot is brought to life by the award-winning Studio Paolo Ferrari, whose design philosophy centers on “Natural Futurism.” The result is a luminous green space covered in softly glowing, steel capped, frosted cylinders, creating a bold interplay of light, texture, and colour.
The interiors feature glowing glass accents, sculptural marble surfaces, and a signature light green palette that radiates with vibrancy. The space resembles a deconstructed disco ball with over 20,000 hand crafted lights giving a unique effect to the space. The backlit metallic elements and polished steel furnishings reflect light in mesmerising ways, adding to the surreal quality of the space. Every detail - from the centrepiece bar to the textured seating - evokes vitality and connection, creating an atmosphere that evolves effortlessly from day to night.
At the heart of the design is a striking light green grand piano, which anchors the room as an artistic centerpiece. Whether bathed in natural daylight or illuminated under evening lights, the space invites guests to immerse themselves in an enchanting environment where elegance and imagination take center stage.
