BOYA, Delhi serves unique Japanese-Peruvian cuisines under the expert guidance of Chef Augusto. Chef Augusto began his career in the kitchens of The Oberoi, New Delhi’s award-winning 360o, before honing his skills internationally. Nowadays, Chef Augusto is acclaimed for his pivotal role in shaping contemporary sushi culture in India, fusing traditional Japanese techniques with modern interpretations in impeccable expressions of bold, distinctive flavours. His signature sushi creations include Kokana Rolls, Cabrera Spiced and Persea Americana, while his fusion dishes range from Yellowtail Carpaccio Ceviche and Sea Bream in Leche de Tigre to Hokkaido Scallops Tiradito in Yuzu Wakame and Miso-Marinated Chilean Sea Bass. Chef Augusto has also cooked for international celebrities and food critics.

Japanese-Peruvian Delicacies at Boya Delhi

From 17th to 19th July 2025, Fenix at The Oberoi, Mumbai is presenting a unique menu by Chef Augusto of BOYA, Delhi. Highlights include the chef’s special appetizers: chicharron with Worcestershire, rock shrimp tempura in sriracha mayo and Filipino pork belly in cane vinegar. Mains include arroz con chancho (spiced pork with rice), Chilean sea bass in saikyo miso, nigiri, sashimi and Chef Augusto’s signature vegetarian and non-vegetarian rolls.
