The Royal Kitchens Meet the Coast: The St. Regis Goa Resort Unveils a Regal Awadhi Feast with Chef Osama Jalali

The St. Regis Goa Resort begins its 2026 culinary calendar with a celebration of heritage and craftsmanship: The Regal Awadhi Feast. Running from January 16th to 24th, this exclusive festival brings the legendary flavours of North India’s royal courts to the refined shores of South Goa.

Awadhi cuisine is defined by the art of dum (slow cooking) and a nuanced use of spices that prioritises depth over heat. This tradition of patience and precision aligns perfectly with the St. Regis philosophy of timeless elegance. Curated by Chef Osama Jalali, a renowned custodian of ancestral Indian recipes, the festival offers an authentic bridge between historic techniques and the modern palate.

Hosted at Miri, the resort’s signature dining venue, the festival features a meticulously crafted menu of iconic preparations, including:

● Signature Starters: Melt-in-the-mouth Galouti Kebabs and fragrant Sheermal.

● Mains: Slow-cooked Nihari, aromatic Awadhi Biryani, and luxurious Mughlai Kormas.

● Desserts: Classic finales such as Shahi Tukda and Kesar Phirni.

The experience extends beyond the menu. To evoke the splendour of a royal durbar, Miri will be transformed with Mughal-inspired décor and live Qawwali performances, creating an atmosphere that is as immersive as it is indulgent.
