The newly crafted menu is a celebration of age-old cooking techniques of India, from the gentle smokiness of clay pot roasting to the layered richness of dum slow-cooking, designed to awaken the senses and evoke the warmth of an Indian kitchen.
The culinary journey begins with Shuruaat, comforting starters like Moong Dal aur Nariyal Shorba for vegetarians or the aromatic Dum Adraki Nalli Shorba for non-vegetarians, setting the tone for indulgence.
In Pehele Kadam, guests can savour creations such as Anjeer Kebab with Spiced Yogurt & Curry Leaf Dust, Delhi Style Aloo Tikki Chaat prepared tableside, Gandhraj Chilli Mahi Tikka, and Mutton Gilafi Seekh Kebab, each showcasing distinct regional influences and time-honoured techniques.
The Khaane Khaas section journeys through the heart of North India from Bagh-e-Sabz and Aloo Dum Kashmiri to Murgh Tikka Makhani and Mangalorean pomfret curry. This is complemented by Chawal ki Peshkash, featuring aromatic pulaos and biryanis such as Subz Pulao and the indulgent Paradha Nashin Biryani.
Enhancing the dining experience are expertly crafted beverages, from signature cocktails like The Front Fire, a bold and smoky creation, and Saffron Saddle, a silky, spice-kissed indulgence, to refreshing mocktails such as Pink Himalayan and Thandai Bloom, each designed to balance and uplift the rich flavours of the millet menu.
